Note: If you use ready-made mango puree, you will need 1 Kg or 4 Cups. If you use fresh mangoes, the mangoes are peeled and cut, and all the flesh is extracted. It is then blended in a food processor until it becomes a smooth puree. A total of 4 Cups of Mango Puree will be needed.

The Pound Cake is sliced and arranged in a serving dish, then set aside.

In a small bowl, add the Gelatin and 1/4 Cup of Water, mix well. Let it thicken.

Once it sets, microwave it for 20 seconds until it dissolves and becomes liquid. Set aside to cool down slightly.

In a blender, add 2 Cups of Mango Puree, Sugar, Cheese, Thick Cream (Qeshta), Whipped Cream Powder, and the dissolved Gelatin. Blend everything together until well combined and the mixture thickens to a creamy consistency.

Pour the Mousse over the Cake in the serving dish, cover it, and refrigerate for at least two hours or until it sets.

In a bowl, add the Boiling Water and the Jelly Packets, then mix very well until completely dissolved.

After that, add the remaining 2 Cups of Mango Puree and mix until everything is combined and thickened.

Pour this mixture over the chilled Mousse, cover it, and refrigerate again for at least 2-3 hours or until completely set.

You can serve it plain or garnish it with fresh Mango Pieces.
