Liver and Gizzards Sandwich with Tahini

Prepare the Ingredients: Start by finely chopping the garlic, bell pepper, and hot pepper (if using). Set them aside.

Cook the Liver: In a pan, heat a little ghee or butter and add the chicken liver. Season with salt and cumin. Sauté the liver until it’s cooked through, then remove it from the pan and set it aside.

Cook the Gizzards: In the same pan, add the gizzards along with the chopped garlic, onion, and peppers. Add cumin, black pepper, coriander, paprika, garlic powder, and salt. Sauté the mixture well until the gizzards are cooked through.

Simmer the Gizzards: Add 1/2 cup of water to the pan and stir. Allow the gizzards to cook and soften in the steam for about 5-7 minutes.

Combine Liver and Gizzards: Once the gizzards are tender and the onions are soft, return the cooked liver to the pan. Stir the liver and gizzards together to combine the flavors.

Add the chopped veggies (first step) to a pan with ghee. Add on top of the livers & gizzards.

Serve in Sandwiches: Toast your bread or pita, spread some tahini on the bread, and fill it with the liver and gizzards mixture. Enjoy!
