Lebanese Tabbouleh Salad
Description
A fresh and vibrant Lebanese tabbouleh made with finely chopped parsley, mint, tomato, soaked bulgur, and a bright olive oil and pomegranate molasses dressing.

Instructions
Soak the bulgur in the juice of two lemons with a small amount of water. Set aside for about 10 minutes until softened.
Finely chop the parsley by hand or using a manual chopper (avoid over-processing).
Finely chop the fresh mint.
Finely dice the tomato.
Slice the green onions very small.
Drain excess liquid from the bulgur if needed.
In a large bowl, combine parsley, mint, tomato, green onions, and bulgur.
In a small bowl, whisk together olive oil, vinegar, pomegranate molasses, salt, and black pepper.
Pour the dressing over the salad.
Mix gently by hand to keep the texture light and fresh.
Garnish with fresh pomegranate seeds and extra mint before serving.
