In a large pan, melt ghee over medium heat. Add the cubed lamb meat, season with salt and pepper, and brown on all sides.
Remove the browned meat from the pan and set aside. In the same pan, add chopped onion and sauté until softened.
Return the meat to the pan, add meat spices, and stir well to combine.
Pour enough hot water to cover the meat. Add bay leaves. Bring to a boil, then reduce heat to low, cover, and simmer for about 2 hours or until the meat is tender.
Check every 30 minutes to ensure there is enough liquid, and stir occasionally. The stew is done when the meat can be easily cut with a fork.
