Juicy Lucy Burger (Cheese-Stuffed Burger)

  1. Start by forming small meat balls. Flatten them out to form large, thin burger patties. The key is to make the patties large enough because they shrink during cooking. (Every patty requires 2 balls)
  2. Take one slice of cheese and place it in the center of one patty. Cover with the second patty, ensuring the edges are sealed well to prevent the cheese from leaking out. (Each patty will require 1 1/2 American cheese slice).
  3. To help the patties hold together, place them in the fridge for about 30 minutes.
  4. While the patties are chilling, melt butter in a skillet over medium heat. Place the burger buns in the skillet, cut side down, and toast until golden and crispy.
  5. Heat some oil in a skillet over medium-high heat. Take the chilled patties and season both sides with salt and pepper (and optional garlic and onion powder). Place the patties in the skillet, starting with the flat side facing down. Do not press the patties to avoid losing the cheese inside.
  6. After 3 minutes, when the first side is nicely browned, flip the patties gently. Season the second side with salt and pepper. Continue cooking for another 3 minutes on the second side.
  7. To make sure it's cooked through, add water to the pan then cover it for 3 more minutes.
  8. Once the patty is nearly cooked through, place a slice of cheese on top of the patty and cover the skillet. This will melt the cheese on top.
  9. Once the burger is fully cooked, remove it from the skillet. Place the patty on a toasted bun, and top with pickles, onions, lettuce, or any other toppings you prefer.
  10. Close the bun, and enjoy your Juicy Lucy Burger while it’s hot and the cheese is still melting inside!
