For the Mango Mayo

In a blender or food processor, combine Mango cubes, Mayonnaise, Honey, Lemon Juice, and Salt.
Blend until completely smooth and creamy. This sauce is incredibly refreshing and pairs well with salads and sandwiches.
Cut the hotdogs diagonally in a spiral fashion around wooden skewers (this makes them look and taste better when cooked).
Grill the hotdogs in a pan with a little oil and a small amount of water until cooked through and nicely browned.
Finely dice the pickled cucumber, jalapeño pepper, tomato, and onion. These vegetables will provide a good balance to the sweet mango flavor.
Slice the hotdog buns lengthwise through the middle. Spread a layer of sour cream on the inside of the bun.
Place the cooked hotdogs inside the bun. Top with the diced tomato, onion, pickled cucumber, and jalapeño.
