Description

  1. Cut carrots, onions, garlic, and leeks into small pieces.
  2. In a pan, add olive oil, the chopped veggies, salt, and Italian blend seasoning and stir.
  3. Cover the pan and let the mixture cook. 
  4. The salt helps draw out the moisture from the vegetables, so leave it until the water starts to dry up.
  5. Mash the mixture with a spoon as it cooks and begins to soften.
  6. Once the vegetables are mashed and the water has evaporated, use a hand blender to blend the mixture until it becomes a smooth paste without any chunks.
  7. Return the paste to the pan and continue cooking until all the remaining moisture evaporates. 
  8. Now add it to the parchment paper and shape it. (Watch the video for technique.)
  9. Put it in the freezer for 2 to 4 hours.
  10. Cut into small cubes.
  11. Store in zip lock bags in the freezer for up to 6 months.
