Prepare the Sushi Rice: Wash the rice thoroughly until the water runs clear. Cook with water on high heat until it absorbs the liquid, then lower the heat and let it cook fully. Mix the rice with sushi vinegar and let it cool completely.

Prepare the Tempura Batter: In a bowl, whisk together the egg, ice-cold water, cornstarch, flour, salt, and vinegar until smooth.

Dip the shrimps in the tempura sauce and fry

Assemble the Sushi Rolls: Place a sheet of nori (shiny side down) on a sushi mat. Wet your hands and evenly spread a layer of rice over the rough side of the nori. Add your choice of fillings (salmon, shrimp, cream cheese, and vegetables).

Roll tightly using the mat, pressing firmly to shape the roll. For fried rolls, coat each roll in tempura batter, then cover with panko breadcrumbs.

Fry the Rolls: Heat oil in a pan to 180°C (350°F). Fry the rolls until golden and crispy (about 3-4 minutes). Drain excess oil on paper towels.

Slice and Serve: Use a sharp knife to slice the rolls into bite-sized pieces, wetting the knife between cuts to prevent sticking. Serve with soy sauce, pickled ginger, and wasabi.
