Blend chicken with onion powder, garlic powder, salt, black pepper, and ginger powder in a food processor until finely minced.

Divide the chicken mixture into three equal portions.

For the first portion, spread it over a sheet of cling film. Sprinkle with paprika, oregano, salt, and black pepper. Roll tightly into a log shape.

For the second portion, mix pistachios into the chicken mixture, then roll tightly using cling film.

For the third portion, incorporate stuffed olives into the chicken mixture, ensuring even distribution. Roll tightly.

Wrap each rolled log in aluminum foil, sealing tightly to maintain the shape.

Steam the rolls for 1 hour using a steaming basket or over boiling water.

Allow the mortadella to cool completely before unwrapping to maintain its firmness.
