For the Hawawshi:

In a large bowl, mix the minced meat, lamb fat, and pastrami/ basterma.

Add the finely chopped white onion, bell pepper, hot pepper, green onion, garlic, and parsley.

Season with beef stock powder, salt, pepper, coriander, and nutmeg.

Mix well until all ingredients are combined.

Stuff the mixture inside pita bread or baladi bread.

Place the stuffed bread in a greased baking tray and bake in a preheated oven until crispy and golden.

Remove from the oven and serve hot.
For the Salad:

In a mixing bowl, combine the diced tomatoes, red onion, parsley, and hot pepper.

Add the lemon juice, vinegar, cold water, salt, pepper, and cumin.

Mix well and refrigerate until ready to serve.
