In a bowl, mix minced meat, drained grated onion, salt, pepper, nutmeg and baking soda/sodium carbonate/ baking powder.

Knead the meat well.

Shape the kofta into fingers.

Grill the kofta on a preheated grill greased with oil or in the oven for 25 minutes maximum on 200 degrees Celsius in the middle shelf.

In a bowl, mix sumac, sliced onions, parsley, salt, pepper and add this mixture as a first layer of the serving plate.

Add the kofta to the serving plate.
