Greek-Style Chicken Gyros

In a bowl, combine yogurt, olive oil, salt, black pepper, paprika, coriander, thyme, and tomato paste. Mix well.
Add boneless chicken thighs to the marinade and coat evenly.
Skewer the marinated chicken onto a large onion cut into a stick shape to create a vertical skewer. Place in a baking dish and roast.
While the chicken cooks, prepare the tzatziki sauce. Combine yogurt, grated cucumber (drained), dill, minced garlic, lemon juice, and olive oil. Mix until smooth.
After the initial roasting, slice the chicken thinly and return to the oven under the broiler for an additional 15 minutes to crisp up.
Prepare the pita bread, then assemble the gyros. Spread tzatziki sauce on the bread, layer with chicken, tomato slices, onion slices, and optional French fries.
Add more tzatziki on top, wrap, and serve immediately.
