Greek Smashed Potatoes

Instructions

  1. Boil the potatoes in water and salt until cooked
  2. When cooked, keep it aside until dry
  3. Using a spatula or a cup, press on the potatoes (like in video)
  4. Prepare marinade: Olive oil, minced garlic, spices, lemon zest, salt & pepper
  5. Brush the potatoes with the marinade then put in the oven at 200 degrees until crunchy
  6. Add fresh mint & parsley on top
  7. Bonus step: Add feta cheese on top and put back in the oven
