For Rice

  1. In a pot add oil and onion and stir till dark brown.
  2. Add rice and stir.
  3. Add water and stir then let it boil.
  4. Season with salt and let it simmer over low heat.

For Fried Fish

  1. Season fish with salt, garlic, lemon and cumin.
  2. In a bowl add flour and corn starch then coat the fish with the mix.
  3. In a deep frying pan add oil over high heat.
  4. Fry the fish until golden brown.
  5. Serve the fish on the top of the rice and sprinkle some fried onions and side with pickled tomatoes.
