Instructions
Peel the potatoes then chop into slices and chop into same-size fingers.
Soak in a bowl filled with water.
In a pan, off-heat, add room temperature water, vinegar, salt & sugar.
Add the chopped potatoes.
Turn heat on (to medium heat).
When it starts to boil, take the potatoes out of the pan and drain on a towel until dry.
Deep fry on medium heat for 3 minutes. (150 degrees celsius)
Take out and drain on kitchen towel.
At this point you can freeze the potatoes.
Deep fry on high heat (180 degrees) until golden.
