Freekeh with Vegetables and Grilled Chicken

In a bowl, mix yogurt, honey, salt, pepper, thyme, and paprika. Marinate the chicken breasts in the mixture and set aside.

In a large pot, heat some oil and sear the marinated chicken breasts until golden brown. Remove the chicken and set aside. In the same pot, add the diced onion and sauté until translucent. Add the bell peppers and continue to cook until tender.

Add the soaked freekeh, bouillon cube, salt, and pepper to the pot. Pour in the hot water, bring to a boil, then reduce the heat to low and simmer for about 30 minutes until the freekeh is tender and the liquid is absorbed.

Plate the freekeh and top with the grilled chicken. Drizzle with yogurt and pomegranate molasses. Garnish with your choice of herbs and serve hot.
