- In a bowl, combine the eggs, sugar, and vanilla.
- Whisk for about two minutes until the sugar completely dissolves.
- Add the milk and oil to the mixture. Continue whisking briefly until just combined.
- Sift the flour and baking powder into the wet mixture using a sieve. Add them in 3-4 separate additions.
- After each addition, whisk gently until just combined. For best results, use an immersion blender on a low speed for very brief pulses to avoid overmixing. Do not overmix the batter; a few small lumps are fine.
- Heat a non-stick pan over medium-low heat. It's crucial to use a good non-stick pan. Do not add any oil or butter to the pan.
- Once the pan is hot, reduce the heat to low.
- Pour a ladle of batter onto the hot pan. Avoid making the pancakes too large (which can result in a doughy center) or too small (which can make them dry).
- Cook until you see bubbles forming on the surface of the pancake.
- As soon as bubbles appear, flip the pancake to the other side.
- Cook for only about three seconds on the second side. Remove the pancake from the pan immediately.
- Once the pancakes cool down, store them in an airtight container in the refrigerator.
- When you want to eat them later, reheat them in the microwave for approximately 15 seconds. They will taste soft and fresh every time.
