Famous Hong Kong Mango Pancake

In a bowl, whisk together milk, egg, vanilla extract, sugar, and flour.
Add a few drops of yellow food coloring to give the batter a mango-like color (optional).
Heat a non-stick pan on low heat and pour a small amount of batter to form a thin pancake, similar to a crepe.
Once cooked, remove from the pan and set aside to cool.
Peel and slice the mango, then place the slices on the pancake.
Add whipped cream or cream on top of the mango slices.
Fold the pancake and place it in the freezer for 5 minutes. The pancake should not freeze but cool slightly.
After 5 minutes, take it out, cut it in half, and enjoy the refreshing mango pancake!
