In a mixing bowl, combine salt, black pepper, sumac, cinnamon, tahini, vinegar, pomegranate molasses, and mint. Mix well until smooth.

Add the beef strips to the marinade. Mix thoroughly to ensure every piece is coated.

Heat a large skillet over high heat. Add the marinated beef and sear until it releases its juices. Reduce the heat to medium and continue cooking until tender.

Optional: Place a piece of charcoal over an open flame until red-hot. Place it in a small heatproof bowl, set it in the tray with the cooked beef, and drizzle a few drops of oil on the charcoal. Cover immediately to infuse the smoky flavor.
