Egyptian Fattah is a vibrant and layered dish bursting with flavor and texture. It's a celebratory meal traditionally served during Eid al-Fitr, but delicious any time of year. The base features crispy pita bread, which softens slightly as it absorbs a delightful garlicky tomato sauce. Fluffy rice and savory, tender meat (often lamb or beef) complete the layers. Toasted nuts and fresh herbs add pops of flavor and color, making Fattah a delightful and visually stunning dish.

Instructions

In a pot, add butter and oil, add the beef, and saute until changes color. Add salt, pepper, bay leaves, cardamom, and mastic. Add hot water gradually when needed until the beef is fully cooked.

In another pot, add oil, garlic, and coriander. Stir until fried. Add a bouillon cube, the blended tomatoes, vinegar, tomato paste, and hot water. Let it simmer and thicken. Season with salt and pepper.

If preferred spicy, saute some chili pepper with chili powder in a saucepan. Add some of the prepared tomato sauce and let simmer.

To prepare the garlic-vinegar sauce, add ghee to a pan and saute minced garlic. Add vinegar and broth and let boil.

In a serving plate, add fried baladi bread, cooked rice, garlic-vinegar sauce, and tomato sauce, and top with beef pieces.
