Heat a non-stick pan over medium heat.

Place a tortilla in the pan then add eggs and add any desired fillings, such as cheese and optional vegetables or cold cuts then cover to cook.

Cover with another tortilla and press gently.

Cook for about 3-4 minutes until the bottom tortilla is toasted.

Flip the quesadilla and cook for another 3-4 minutes until the cheese is melted and both sides are toasted.

Remove from the pan and let it cool slightly.
