Heat olive oil in a pan then add carrots and sauté them until they start to soften.

Add green and yellow peppers, along with rosemary, to the pan. Continue to sauté until the vegetables are tender.

Season the vegetable mix with salt and pepper to taste.

Once cooked, transfer the mixture to a bowl and allow it to cool down.

In a separate bowl, combine egg whites and Greek yogurt.

Mix well until fully combined.

Add the cooled vegetable mix, olives, and cheese to the egg white and yogurt mixture.

Stir until all the ingredients are mixed.

Grease the muffin tray with a small amount of olive oil.

Spoon the mixture into the muffin tray, filling each cup about three-quarters full.

Crumble feta cheese on top of each muffin for added flavour.

Place the muffin tray in a larger tray and pour water into the larger tray, creating a water bath.

Oven bake at 180 C and serve.
