Preheat your oven to 180 Celsius.

Grease a muffin tray.

Cut your tortilla into triangles and place in the muffin tray.

Add 1 egg and your favorite veggies to each muffin.

Add salt & pepper and mix.

Add your favorite cheese on top.

Bake for 15 minutes and then turn on the grill for 5 minutes to have a golden look.

Remove from the muffin tray immediately and leave to cool on a rack. (This will help the tortilla to stay crispy).

Store in an air tight container in the fridge for maximum 5 days or in the freezer for 3 months.

Heating instructions : microwave for 1 minute or air fry for 2-3 minutes on 180 Celsius or in the oven for 5 minutes on 180 Celsius.
