Egg Muffins (Meal Prep.)

  1. Preheat your oven to 180 Celsius.
  2. Grease a muffin tray.
  3. Cut your tortilla into triangles and place in the muffin tray.
  4. Add 1 egg and your favorite veggies to each muffin.
  5. Add salt & pepper and mix.
  6. Add your favorite cheese on top.
  7. Bake for 15 minutes and then turn on the grill for 5 minutes to have a golden look.
  8. Remove from the muffin tray immediately and leave to cool on a rack. (This will help the tortilla to stay crispy).
  9. Store in an air tight container in the fridge for maximum 5 days or in the freezer for 3 months.
  10. Heating instructions : microwave for 1 minute or air fry for 2-3 minutes on 180 Celsius or in the oven for 5 minutes on 180 Celsius.
