Crunchy Simit (Turkish Sesame Bagels)

In a bowl, combine warm water, sugar, and instant yeast. Stir and let it sit for 10 minutes until it froths.

In a large mixing bowl, add flour and salt. Create a well in the center and pour in the yeast mixture. Gently combine the ingredients by folding the flour into the water until it starts to come together.

Transfer the dough onto a work surface and knead for 10 minutes until smooth and elastic.

Coat a large bowl with oil and place the dough in the bowl. Cover with a cloth and let it rise in a warm place for about 1 hour or until it doubles in size.

Once the dough has risen, divide it into 5 equal portions. Roll each portion into a long rope, then fold each rope to form two legs. Twist the legs together to create a braid, and pinch the ends together to seal.

In a shallow dish, place lightly toasted sesame seeds. In another dish, mix molasses and water to thin it out.

Dip each shaped simit into the molasses mixture, then coat it in sesame seeds.

Preheat the oven to 180°C. Place the simit on a baking tray lined with parchment paper and bake for 25 minutes, or until golden and crispy.

Let the simit cool slightly before serving. Enjoy on its own, with cheese, or with your favorite toppings.

If you want to prepare the spice mix, add all ingredients to a grinder and grind until coarse. Then enjoy this mix with your simit.
