Instructions
Prepare bring by mixing ingredients together in a bowl.
Open the chicken, remove the back, break the bones and put in the brine, add water and leave for 2 days in the fridge.
In a bowl, mix all batter ingredients together except the eggs and malt beverage.
Divide the flour mix into 2 bowls. Add malt beverage to one of the bowls then add egg yolks.
Whisk the egg whites until foamy then add to the wet batter.
Dip the chicken in the flour then the wet batter then the flour again then fry.
