  1. In a bowl, whisk the egg yolks and the sugar together. Set aside.

  5. Place the baking dish or ramekins in a large baking pan. Carefully quarter-fill the pan with hot water.
  6. Bake in a preheated oven until the center is barely set.
  7. Cool completely. Refrigerate for several hours and up to a couple of days.
  8. Sprinkle a thin layer of sugar all over the surface. Caramelize the sugar with a kitchen torch and serve immediately or refrigerate for up to an hour before serving.
