Use a mandolin slicer to cut the potatoes, sweet potatoes, and beets into thin slices for better crispiness.
Mix the potato and sweet potato slices in a bowl with salt, lemon juice, and a teaspoon of vinegar. Let them sit for a few minutes.
Separately, season the beet slices with salt, lemon juice, and vinegar to prevent color bleeding.
Heat oil in a deep fryer or use an air fryer. Fry the potato and sweet potato slices together until golden and crispy.
Fry the beet slices separately to avoid staining the other fries.
Serve the fries together on a plate for a colorful, flavorful mix. Enjoy with your favorite dips!
