  1. Chop the green bell pepper, tomato, and onion into small pieces.
  2. In a bowl, mix salt, black pepper, thyme, chili powder, paprika, garlic powder, parsley, and lemon juice.
  3. Set aside some of the chopped vegetables.
  4. Marinate the boneless chicken thighs in olive oil and the spice mixture for at least two hours.
  5. Heat a skillet and add oil then add the marinated chicken.
  6. Cook the chicken on both sides until it gets a nice golden color, then remove from the skillet.
  7. Cut the cooked chicken into small pieces.
  8. In the same skillet, add the remaining vegetables and sauté them.
  9. Add the chicken pieces back to the skillet and mix well.
  10. Add ketchup or tomato sauce to the mixture for a hint of sweetness.
  11. Prepare the mini tortillas by heating them in the skillet.
  12. Fill the tortillas with the chicken and vegetable mixture.
  13. Top with mozzarella cheese and the reserved vegetables.
  14. Cook the filled tortillas on low heat until the cheese melts and the tortillas get a nice crust.
  15. Serve the flavorful chicken tacos hot.
