Chicken Stuffed with Rice & Liver

Instructions

  1. Pan fry the minced onion in oil & butter until softened.
  2. Chop the gizzards & liver into small pieces then add to the pan. Mix well.
  3. Add the minced garlic, all the spices and stock cube. Add raisins.
  4. Add the rice and stir. Then add the water. (Water should be half the quantity of the rice - so for every 1 cup rice, 1/2 cup water).
  5. Marinate the chicken with onion, salt & pepper.
  6. Stuff the chicken with the rice mix then close with toothpicks (watch video for technique).
  7. Roast in the oven and enjoy.
