For the Roast Chicken

  1. In a chopper, add onion, tomato, chili pepper, instant chicken broth, pepper, nutmeg, garlic powder, ground coriander, and lemon juice. Blend until well combined.
  2. Divide the marinade into halves for the two chickens. Massage each chicken very well with the marinade. Place separately in plastic containers and freeze for one to two months.

For the Hatty Kofta

  1. In a chopper, add ground beef, tail fat, chili pepper, minced and well-drained onion, pepper, Himalayan salt, garlic powder, and mixed spices. Blend until fully combined.
  2. In a small bowl, add onion water, oil, and tomato paste. Mix together.
  3. Damp your hands with the onion water mixture. Take a fistful portion of the meat mixture and mold it on a wooden skewer, use your fingers to form crimps for texture and looks.
  4. Remove from the skewers and arrange in a plastic container. Freeze for one to two months.
