Pop the Popcorn and then let it cool completely.
In a saucepan over medium-low heat, melt the Sugar.
Let it cook without stirring too much until it starts to turn a light brown color.
As soon as the sugar gets that light brown hue, quickly add the Baking Soda and stir immediately.
Turn off the heat. If you want salted caramel, add a little Salt (like Himalayan salt) at this point and stir it in.
Very quickly, add the cooled Popcorn to the caramel in the saucepan.
Stir thoroughly to make sure all the popcorn is well coated with the caramel.
Immediately spread the coated popcorn onto a baking sheet or tray. Make sure to spread it out quickly to prevent it from clumping together as it hardens.
Let the caramel popcorn cool completely and set. Once it's hard, break it apart into individual pieces.
