  1. Mix paprika, onion powder, garlic powder, chicken stock powder, salt, and pepper in a bowl.
  2. Add a portion of the spice mix to the flour.
  3. Dip the chicken in buttermilk with a bit of the spice mix, then coat it in the seasoned flour. Repeat the process to create a double coating for extra crunch.
  4. Let the coated chicken rest for 5-10 minutes to set the crust.
  5. Heat oil in a deep pan and fry the chicken until golden and crispy. Drain on paper towels.
  6. Blend blue cheese, sour cream, mayonnaise, garlic, and buttermilk in a blender until smooth. Adjust consistency with more buttermilk if needed.
  7. Toss the fried chicken in buffalo sauce.
  8. Spread blue cheese sauce generously on the sandwich bun. Add the buffalo chicken and top with more sauce.
