  1. In a bowl, add water, yeast & sugar, stir and leave them for 5 minutes.
  2. In another bowl, add flour and salt and mix well.
  3. Make a hole in the center of the flour then add the egg and the water-yeast mixture.
  4. Add milk and a pinch of black pepper. Then knead well to form the dough (around 10 minutes).
  5. Brush the dough with oil then transfer to a bowl brushed with oil and cover till it doubles in size. This should take 1-2 hours depending on the weather.
  6. Transfer to countertop or silicone mat then cut into 6 equal pieces. Shape the pieces into balls using your hands. Let them rest for a while.
  7. In the meantime, prepare the chicken. Cut the chicken into thin slices.
  8. In a pan on high heat, add oil and butter then the chicken (add the chicken gradually). Season with salt, pepper, thyme and minced garlic.
  9. Transfer the cooked chicken to a bowl then add olives, chopped green bell pepper, chili pepper (optional) and chopped tomatoes. Add shredded mozzarella cheese. Mix well.
  10. Add ketchup or salsa and mix again.
  11. On a silicone mat, add flour and spread the dough balls.
  12. Add the stuffing in the center then close (Watch video for technique).
  13. In a baking pan, brush oil and flour then add the stuffed dough balls.
  14. Brush with egg wash or butter & milk mixture. Sprinkle sesame on top.
  15. Bake in the oven at 180 degrees celsius for 15-30 minutes in the middle rack.
  16. Optional step: Half way through baking, take out of the oven, sprinkle grated cheese on top then resume baking until cheese melts.
