Pan sear the beef cubes on high heat in oil until colored. Set aside.
In the same pan, add butter then sliced onion, chopped carrots and sliced mushrooms. Stir well.
Season with salt, pepper, worcestershire sauce, sugar, mustard and thyme. Stir well.
Add flour and stir until it dissolves/ disappears.
Bring the beef back to the pan. Add beef stock. Let it cook on low heat until fork tender (2-3 hours).
When cooked, add cooking cream and stir.
Transfer to a tajin (or same pan if oven safe).
Cover it with puff pastry block and use a fork to seal the edges. Brush with egg wash then make a couple of small openings using a knife.
Bake in a preheated oven for 25 minutes or until golden brown.
