Beef Shanks with Basil Rice & Toasted Nuts

Instructions
Cooking the Beef

In a bowl, marinate beef with salt, pepper & flour.

Pan sear the beef on very high heat in ghee or butter until colored. Set aside.

In the same pan, add butter and cook the chopped onion then add garlic and the spices.

Add tomato paste, worcestershire sauce, soy sauce, thyme and sugar. Add flour and mix well.

Add a pinch of nutmeg then add the beef back to the pan.

Add the beef stock and let it cook until fork tender on low heat for 3 hours.
The Rice

In a pan, add ghee and mastic then the rice and stir well.

Add the beef stock, salt & pepper. Then cover and let it cook.

Before serving, add minced fresh basil to the rice.
For Serving

In a serving dish, put the basil rice then the cooked beef and top it off with toasted nuts.
