Instructions

  1. Pat dry the shanks then marinate well with salt, pepper & olive oil.
  2. In a pan, add olive oil then pan fry the shanks.
  3. Add butter, rosemary & whole garlic then set aside..
  4. In the same pan, add chopped onion, garlic & leek (or celery & spring onion)
  5. Add chopped carrots & fresh rosemary.
  6. Season with salt, pepper, paprika & spice mix.
