Beef & Onion Casserole (Tagine)
Description
A traditional Egyptian beef and onion tagine where tender beef cubes are slowly cooked with caramelized onions, warm spices, and a rich sauce. The high-collagen beef cut keeps the meat incredibly juicy and soft after baking in the oven.

Season the sliced onions with salt and black pepper.

Mix well and place them in a strainer for several minutes until they release some of their moisture and soften slightly.

Heat a large pot over medium-high heat. Add the oil and half of the ghee.

Add the beef cubes and sear them well until they develop a golden brown crust on all sides.

Remove the beef and set aside.

In the same pot add the seasoned onions and sauté them until they start to soften and lightly caramelize.

Add the cinnamon sticks and bay leaves and stir until fragrant.

Return the beef to the pot and mix it with the onions.

Add the ground cardamom and beef stock powder and stir well.

Pour in the hot water and allow the mixture to boil for about 10 minutes.

Grease a baking casserole with the remaining ghee.

Transfer the beef and onion mixture into the casserole along with its sauce.

Bake in a 180°C oven for about 45 minutes until the sauce thickens and the beef becomes very tender.
