Instructions
Light Sugar Syrup

In a pot, mix water with sugar and add a slice of lemon.

On heat, stir the sugar syrup from the middle of the pot.

Once the sugar syrup starts boiling stop stirring and let it boil once then turn off the heat.

Let it chill to reach room temperature.
Heavy Sugar Syrup

In a pot, mix water, sugar and 2 drops of lemon juice.

On heat, don't stir the sugar syrup, once the sugar syrup starts boiling, stop stirring, lower to the heat and leave it to boil for 5 minutes.

Leave the sugar syrup to chill.
Basbousa

In a bowl, mix semolina with melted ghee.

Add the fine coconut, slightly mix and set them aside.

In a separate bowl, mix milk, sugar and heavy sugar syrup/ glucose honey/ white honey/ corn syrup.

Warm the milk mixture, stir it well then mix it with the semolina mixture.

Grease the oven tray with ghee and add the basbousa mixture

Let it rest in the fridge for 15 minutes.

Bake it in a preheated oven for 30 minutes on 200 degrees Celsius on the bottom flame till it takes the golden color from the edges, then turn on the grill to take the same color from the top.

Pour the light sugar syrup on the hot basbousa and leave it aside to absorb it all.

Slightly brush the top of the basbousa with ghee and leave it to chill for 30 minutes before serving.
