In a bowl, combine minced garlic, mustard, lemon and orange juice, melted butter, honey, salt and pepper.

Line your baking sheet with foil. Lay the salmon on the baking sheet. If your salmon still has the skin, lay it skin side down. Pour the mixture over the salmon to evenly coat. Place a rosemary sprig on each salmon piece. Wrap the salmon with the foil.

Place in a preheated oven at 180 degrees for 15 minutes. Unwrap the salmon so the top is completely exposed. Place under the broiler for about 2 minutes.
