Instructions
Preheat the oven to 180 degrees.
Marinate the chicken for at least 10 minutes.
Heat olive oil and sear the chicken (skin side down first, then flip). Leave for 3-5 minutes on each side.
Remove the chicken from the pan and add the onions and leave for 2-3 minutes.
Add the potatoes and carrots and cook them for around 10 minutes.
Add the garlic and parsley.
Add all ingredients for the sauce (honey, sweet chili sauce, soy sauce, brown sugar & mustard ) in a separate pan and leave to boil until it thickens.
Add the chicken back on top of the veggies and pour the sauce evenly over everything.
Roast for 1-1.30 hours.
