Mahshy; Stuffed Zucchini & Aubergine

Instructions
In a pan, add oil and pan fry the diced onions.
Add tomato juice/ puree, stock cube and the spices. Let it simmer.
Add the rice, stir then turn off the heat.
When rice is not hot, add the minced coriander, dill, parsley and some mint. Add pomegranate molasses and stir.
Stuff the mahshy; zucchini, green bell pepper and aubergine with the rice. Do not overstuff to leave room for the rice to get cooked.
Heat any broth you have (chicken, meat or vegetable) then add a pinch of pomegranate molasses and stir.
Transfer the mahshy to a pan then add the broth.
Cook on high heat until water is absorbed then lower the heat.
