Cut the chicken breasts to medium thickness – not too thin nor too thick.
Marinate the chicken breasts with the onion juice, salt, pepper. Refrigerate for half an hour.
Add eggs to the chicken bowl. Dip the pieces in the breadcrumbs (marinate with chicken seasoning), pressing with your hands to secure the coating.
Let the pieces rest in the fridge for another half hour.
Heat the oil over medium heat and fry the chicken pané until golden and cooked through.
Drain the chicken on a wire rack, not on paper towels, to keep it crispy.

Make sure the chicken pieces are of medium thickness so they cook through. Let the chicken rest in the fridge after marinating and after coating with breadcrumbs. The oil temperature should be medium for perfect crispiness.
