Duck with Laba
Description
Laba is a traditional dish similar to Saudi Saleeg and Italian risotto. It is prepared by boiling duck with spices, then adding rice and milk and stirring continuously until cooked. The duck is served browned with creamy laba.

Instructions
Place coarse salt, peppercorns, coriander seeds, and nutmeg in a bowl and grind well to create the Recipe Spices.
For boiling the duck: Heat ghee in a pot, add onion, carrot, and garlic, and sauté. Add 1 tbsp of the Recipe Spices, cilantro stems, and bay leaves, and stir well.
Add the duck and sauté for 1 minute, then cover with hot water and let it boil over medium heat for 1.5 hours.
For the laba: Heat ghee in a pot, add chopped onion, and sauté until wilted. Add 1 tbsp of the Recipe Spices and stir.
Add the rice and stir for 1 minute, then add duck broth and let it cook then add milk. Stir constantly until it boils, then let it simmer on low heat until the rice is fully cooked.
For browning the duck: Heat 1 tbsp ghee in a pan, add coarse salt, peppercorns, and coriander seeds.
Add the boiled duck and turn until browned on all sides. Remove from pan and place on top of the laba.
