Instructions
Melt some ghee in a pot over medium heat. Add the soaked and drained rice and toast it for several minutes until lightly fragrant.
Season the rice with salt, black pepper, cinnamon, and date molasses.
Pour in the beef stock and bring it to a boil.
Cover the pot, reduce the heat, and cook until the rice is fully tender and fluffy.
In a separate pan melt some ghee and sauté the sliced onions until they soften and begin to caramelize.
Season with salt, black pepper, and cumin, then add the sliced garlic and continue stirring.
Add the boiled chicken liver to the pan and sauté briefly until lightly browned.
Mix in the date molasses and stir well so the liver and onions absorb the flavor.
For the topping, sauté chopped Medjool dates with mixed nuts in a little ghee until lightly golden.
To assemble, place a layer of rice in a serving mold or deep dish, add a layer of the liver mixture, then cover with more rice.
Invert onto a serving plate and garnish with the toasted nuts and dates before serving.
