Instructions
Crack the eggs directly into a saucepan and add butter. Do not whisk beforehand.
Place the pan over medium heat and begin stirring continuously using a silicone spatula while moving the pan around.
Keep stirring constantly to create soft curds.
After a short time on the heat, remove the pan from the stove while continuing to stir.
Return it back to the heat briefly, then remove it again. Keep alternating between heat and no heat while stirring the entire time.
The residual heat from the pan will continue cooking the eggs gently, creating a creamy texture without overcooking.
Season with salt and black pepper only at the end.
