Instructions

  1. Boil lentils in water until tender. Add salt & cumin.
  2. Drain and set aside to cool.
  3. Prepare the dressing by mixing olive oil, pomegranate molasses, lemon juice, salt, and vinegar until well combined.
  4. In a large bowl, combine the cooled lentils with sweet corn, colored bell peppers, and fresh parsley.
  5. Pour the dressing over the salad and mix thoroughly until everything is evenly coated.
