Hawawshi with Minced Meat, Sausage سجق, and Mozzarella

A hearty Egyptian hawawshi made with a flavorful mix of minced meat, Alexandrian sausage, herbs, spices, and melted mozzarella, baked until crispy and golden.

Instructions
In a large bowl, combine minced meat and Alexandrian sausage.
Add minced lamb fat, chopped onion, parsley, and chopped hot pepper.
Season with black pepper, salt, hawawshi spices, and dried coriander.
Mix everything thoroughly until well combined.
Set aside, and if desired, store part of the mixture in the freezer.
Open the fresh baladi bread carefully.
Stuff with a suitable amount of the meat mixture.
Add mozzarella cheese inside the filling.
Close the bread tightly.
Brush the outside lightly with ghee.
Wrap with parchment paper.
Bake in the oven until fully cooked and crispy.
