Instructions
-
Preheat your oven to 170°C 15 minutes before you begin.
-
Prepare a 25x35 cm (10x14 inch) baking pan by greasing it with butter or ghee, then dusting it with flour and tapping out any excess.
-
In a bowl, whisk together the flour, cornstarch, baking powder, and a small pinch of salt.
-
Using a stand mixer or a hand mixer, whip the eggs with the sugar and vanilla for 7 minutes on high speed. The mixture should become creamy, light in color, and double in volume.
-
Add the warm milk and mix on low speed for just 30 seconds.
-
Add the warm melted butter (or oil) and mix again for another 30 seconds.
-
Sift the dry ingredients (flour, cornstarch, baking powder, and salt) into the wet mixture gradually.
-
Mix one last time on very low speed, just until the flour disappears. Do not overmix.
-
Pour the batter immediately into the prepared pan. Tap the pan on the counter twice to release any air bubbles.
-
Use a wooden skewer to run a line down the middle of the cake to prevent it from cracking.
-
Bake in the preheated oven on the middle rack with heat from the top and bottom for 40-45 minutes.
-
Let the cake rest for 10 minutes after you take it out of the oven before slicing.
-
You can serve it plain or with the quick orange glaze, which you can make by mixing powdered sugar with milk and vanilla.
-
Add the glaze to each slice right before serving, as it will set quickly.
