In a bowl, combine the eggs, sugar, and vanilla.
Whisk for about two minutes until the sugar completely dissolves.
Add the milk and oil to the mixture. Continue whisking briefly until just combined.
Sift the flour and baking powder into the wet mixture using a sieve. Add them in 3-4 separate additions.
After each addition, whisk gently until just combined. For best results, use an immersion blender on a low speed for very brief pulses to avoid overmixing. Do not overmix the batter; a few small lumps are fine.
Heat a non-stick pan over medium-low heat. It's crucial to use a good non-stick pan. Do not add any oil or butter to the pan.
Once the pan is hot, reduce the heat to low.
Pour a ladle of batter onto the hot pan. Avoid making the pancakes too large (which can result in a doughy center) or too small (which can make them dry).
Cook until you see bubbles forming on the surface of the pancake.
As soon as bubbles appear, flip the pancake to the other side.
Cook for only about three seconds on the second side. Remove the pancake from the pan immediately.
