Peel the potatoes using a potato peeler or a knife. As you finish each potato, place it immediately into a bowl of cold water to prevent discoloration.

Cut the potatoes into evenly thick sticks. Aim for a consistent thickness to ensure even cooking.

You can use a knife for manual cutting or a mandoline/fry cutter for quicker, uniform results.

Place all the cut potato sticks into a large bowl with cold water, preferably with a few ice cubes.

Add salt and white vinegar.

Soak the potatoes in this water for at least one hour.

After soaking, drain the potatoes thoroughly from the water.

Spread the potato sticks in a single layer on kitchen towels or paper towels.

Pat them completely dry with more towels to remove all excess moisture. This step is crucial for crispiness.

Heat frying oil in a deep pot or fryer. The oil should be hot, but not smoking hot (around 160-170°C).

Fry the potatoes in batches during this first fry to avoid overcrowding the pot, which can lower the oil temperature.

Fry for about 5-7 minutes, or until the potatoes are cooked through, slightly softened, but not yet browned. They should appear pale and soft.

Remove the potatoes from the oil and transfer them to a plate lined with paper towels to drain excess oil. Allow them to cool down completely (at least 15-20 minutes, or longer).

Increase the oil temperature to very hot (around 180-190°C).

Return the cooled, partially fried potatoes to the hot oil in batches.

Fry for only 3-4 minutes, or until they turn a beautiful golden-brown and are crispy. This step happens quickly!

Remove the crispy fries from the oil and immediately transfer them to a wide bowl.

While the fries are still hot, sprinkle them generously with salt and your preferred seasonings (e.g., paprika, garlic powder, onion powder).
